While visiting Hurricane Ridge in the Olympic National Park with my friend Becky of Interstellar Orchard, I make a vegan Split Pea Soup in the Instant Pot in the van. I love the Instant Pot for fast, easy, parking lot food! Vegan Split Pea Soup: Heat 1 T coconut oil on saute in a 3qt Instant Pot Add about 1/4 of a yellow onion, chopped and saute Chop one stalk celery Chop 4 carrots and add to the onions while on saute. Add seasonings (sage, cayenne, salt and pepper, turmeric, garlic, etc. to taste) Sort and rinse 2 C dried split peas (from the bulk section of a natural food store) You can also add chopped potatoes, cabbage or other greens, or sweet potatoes if you like. Fill the pot with water between the 1/2 and full mark. Seal and cook on high pressure for 3 minutes. Allow pressure to release naturally. If you aren't looking for a vegan soup, you can always add ham or bacon, but it's not at all necessary. TheGalavan is a custom-built, 2015 Sprinter van.
