I don't think ribs when I think about Sichuan food, but maybe that will change. Liao's Ribs are an award winning Chengdu snack. They're a brand that is known across China. The first shop opened in 1982 and since then the company has grown to over 500 locations across China. Their secret? An amazing brine that fills a piece of meat with so much flavor that you'll appropriately respond by saying, "Mmm, this meat has so much flavor."

I am a bit of a rib connoisseur - a rib head, a ribaholic. I feel like the best ribs are the ones I make at home (Sara and I have worked hard to master the recipe), so how do Liao's ribs compare? Well, they aren't as tender. The texture of the meat is firmer, which is a Chinese preference. If the meat is too tender it puts people off in China. At least that's what I've been told. At any rate, I don't mind a bit of bite in my meat. The meat is flavorful though - more flavorful than the majority of ribs I've eaten. The brine really does help infuse the meat with some magical tastes. Most ribs in the west get their flavor from a sauce. Liao's ribs don't really need a sauce. Overall, I loved the ribs and I'd definitely head back for more. In fact, I could see myself stopping in for a bone every time I pass a Liao Rib location - even if it's not time for a meal.

The shop is called 廖排骨 (liào páigǔ) and the 2 types of ribs I tried are: 
五香卤排骨 - Wǔxiāng lǔ páigǔ - 5 spice brined
香辣小排骨 - Xiāng là páigǔ - spicy ribs

In this series, I am eating my way through a deck of cards. I bought a deck of food themed playing cards that feature a different Sichuan dish on every card. Every week I'll shuffle the deck and pick one random card to hunt down and sample. Chengdu was the first Asian city to be named a UNESCO City of Gastronomy. It's full of incredible food - a lot of which you probably don't know about.
