This preparation represents a few years of experimentation on my part, most of which occurred throughout my ownership of Mexican restaurants. There are literally hundreds of different formulas spread across the US and Mexico for this dish. Some are extremely simple and some are moderately complicated. This one is moderately complicated, but in my opinion, well worth the effort. This soup also freezes well and is fairly affordable to make. I think the fun part about this soup is the dozens of different ways it can be garnished.
