Greetings!  I was inspired to make this dish for supper because I saw a recipe for something similar in a hoity toidy publication.  So I ran with the idea and made it my own.  A loaf of chibbata bread, some roasted eggplant and mushrooms, a little bit of chicken and if you like some roasted red pepper, then throw that on too!  I topped it all with some of the homemade tomato sauce I spent the day preparing and covered it all up with some fresh mozzerella cheese.  I put it in the oven for about 5 minutes and voila'!  Dinner!

Simple, delicious and thrifty.  Use that wonderful garden bounty that is coming out of your back yard or farmer's market and you have the start of a great dinner.  Just perfect for the hot days of summer, you are in and out of the kitchen fast!  You can even make this ahead of time and heat it up when you are read to eat!

I hope this inspires you to make something wonderful for supper tonight!  This is perfect because it is filled with veggies and a bit of chicken and just that crunchy chibbata bread on the bottom!  Delicious!
