Spiced Mackerel with Chickpeas recipe | Morrisons

This delicious dish is under 500kcals, so perfect for a light summer supper. The spices work perfectly with mackerel's strong flavour. (Baking the mackerel would work, too!)

Ingredients

500g mackerel fillets
2 cloves garlic, crushed
2 tsp smoked paprika
1 tsp ground corainder
pinch cinnamon
1 tbsp orange juice
1 tbsp olive oil
1 red onion, diced
2 cans chickpeas, drained and rinsed
200g cherry tomatoes, halved
2 tbsp red wine vinegar
handful parsley, chopped

1. Mix together the garlic, smoked paprika, ground coriander, cinnamon, orange juice and half the oil. Slash the mackerel and smear the orange mixture all over the fish and into the slashes. Heat a grill or griddle pan until hot and cook the mackerel for 5 -- 6 minutes on each side or until cooked though.
2. Meanwhile heat the remaining oil in a non-stick frying pan and cook the onion for a few minutes to soften. Stir in the chickpeas and cook for another 2 -- 3 minutes to heat through, then stir in the cherry tomatoes and red wine vinegar. Remove from the heat and add the parsley just before serving. Divide the chickpeas between plates and serve with the mackerel.
