Well, I was ready to do this video, and then my voice gave out. But nothing can stand in the way of Brined Double Cut Pork Chops grilled on the Weber Kettle! So sit back and enjoy some grilling, some music, and some tasty food. The brine is a simple mixture of 6 cups water, 1/2 cup each Kosher salt and light brown sugar, a sprig of rosemary, and 2 cups of ice cubes. After cutting the chops, submerge them in the brine solution for 6 hours in the refrigerator. At the end of that time, remove them, rinse them, pat them dry, and coat them with your favorite seasoning. Remember there will already be a good amount of flavor from the brining, so don't overdo it. Set your grill up for indirect grilling. Place the chops on the indirect side, with a meat probe in the largest chop to monitor your internal temps. Put a piece of your favorite wood on the coals (or chips in a wood box for gas grills) and cover. Maintain the temp of your barbecue between 350 and 400. When the chops show 120 internal temp, remove the probe and sear each over direct heat for 1 minute on each side. Then return the chops to indirect heat and cover the grill. Check temps every 5 minutes with an instant read thermometer and pull them from the grill when the internal temp is between 140 and 145. Place in a pan and cover with foil for 10 minutes to rest, and then dig in!
