Shrimp Scampi
2lb             peeled and deveined  shrimp
2-4tbl        minced garlic
1                lemon zested
1/2tbl        red chili flake
1/4cup      white wine
TT              salt
TT              black peppe
1/2bunch  flatleaf parsley chopped
4oz             grated Parmesan cheese
2-4tbl          clarified butter

Add minced garlic to 2tbl butter and cook through
Add shrimp and cook about 2 minutes at medium heat
Add red chili flakes and lemon zest and remaining butter
Add wine and lemon juice
Add salt and pepper
Stir well and add parley and wilt
Stir in Cheese
Warm all ingredients and serve over a bed of pasta
