This is how to make a Christmas Bun Wreath.

I have substituted sugar and used fructose (fruit sugar). I have also used the sweet water that I soaked the dried fruit in.

Ingredients
40g Butter meted in 30ml of hot water
100g Currants
100g Sultanas
220ml Lukewarm water
400g Strong White Bread Flour
100g Strong Wholemeal Bread Flour
5g Salt
50g Fructose (Fruit Sugar) (Optional)
30ml Oil
1 and a half sachets of fast acting yeast
2 Eggs
Sugar and Water (glaze for the top) (Optional)
Gold sprinkles (Optional)

It is just like a big currant bun so you can make any other shape you like.

1. Melt 40g of butter in 30ml of boiling water
2. Soak 100g of currants and 10g of sultanas in 220ml of lukewarm water (we will use the water to make the dough)
3. Put 400g strong white bread flour, 100g strong wholemeal bread flour, 5g Salt, 50g fructose (fruit sugar), 30ml Oil, 1 and a half sachets of fast acting yeast and 2 eggs into the mixing bowl and start to mix using a dough hook.
4. Drain the water from the dried fruit into a jug
5. Add the melted butter and water to make the dough
6. Mix for 6 to 8 mins on 2nd speed to develop the dough until nice and smooth and soft to touch
7. Take the dough out of the mixing bowl and fold in the currants and sultanas
8. Leave to rest for 10 minutes
9. Divide the dough into 4 pieces (One smaller piece and three the same size)
10. Roll out all the pieces
11. Make a 3 strand plait out of the 3 pieces of dough that are the same size . Shape this round to make a wreath shape
12. Use the smaller pieces of dough to make the bow in the front
11. Place in a hot humid environment. I have set up an oven on a low heat (80 degrees centigrade) with a tray of boiling water at the bottom. Leave to proof up
12. When risen, place in an oven set at 200 degrees centigrade. Bake for 12 to 15 minutes or until golden brown and sounds hollow when tapped on the bottom
13. Mix sugar and water as a glaze and add sprinkles. (optional)

You do not need to add the fructose if you want to make it even healthier
