Its that time of year ! #BakingSeason when we start thinking about christmas cake- but first DID YOU SOAK YOUR FRUIT? usually soaking your fruit is done months in advance but no worries if you haven't done it yet! This is a reminder to get started for those who like Jamaican Black Cake/ Christmas cake/ Wine cake/ fruit cake. Please watch the videos listed below for detailed HOW TO soak the fruit and How to Bake the cake/recipe. Here is another tip: If it is a few days before Christmas and you started late and never got to soak any fruit : bring some wine to a boil, add dried fruit and simmer on low for about 3 minutes. Turn Off the heat and Let sit for at least an hour . Fruit will enlarge, soften and absorb the wine. Coarsely blend fruit and wine mixture and use in batter. Feel free to add Rum before and after baking! This is not the traditional way of doing it and flavor may not be as intense but it works if you are in a pinch! Hope this helps.
