Mac & Cheese! | Cooking With That Sounds Fun

My all time favourite comfort food is Mac & Cheese, so I wanted to share with you all my recipe for it! Perfect food for the winter or when you just want an excuse to eat loads of cheese! Check it out, give it a go and let us know what you think!!

Recipe & Instructions:

500g Macaroni/Amori
60g unsalted butter (more if coating and baking)
60g plan flour
1 litre milk scalded (I use Jersey Gold)
salt and pepper
1 teaspoon dry mustard
300-450g cheese(s) (I use a mix of smoked red Leicester and monterey jack)
fresh parmesan
1 tablespoon chopped fresh flat leaf parsley
100g panko breadcrumbs (optional)

Cook the macaroni/pasta and set aside. If you're intending to oven bake the dish slightly undercook the pasta by a couple of minutes.

Melt the butter in a pan over a medium heat, once melted add the flour and stir to cook down until the flour has been cooked off and smells a bit like pie crust.

Slowly stir in the milk a little at a time, whisking to ensure it remains smooth. Once you've added the milk, turn the heat up a little and let it simmer slightly for a few minutes.

Add the mustard powder and cheeses and continue to mix well while the cheese melts.

Add the cooked pasta, mix well, and immediately serve topped with parsley and parmesan or alternatively melt down some additional unsalted butter in a pan and mix with the panko breadcrumbs. Top the dish and bake in an oven preheated to 180 degrees C for 15-20 minutes (or until golden brown).
