 Cooking Eggs, How to Cook Eggs, Baked Eggs, Eggs in Marinara, How to Bake Eggs In Marinara   If you've looked around my channel at all, you see a few themes that should be standing out by now - I love fresh, homemade food, and I also love having 'banked' meals in my fridge or freezer - things that I've done earlier that make it really fast to put together a quick meal. I also love having things I can put together inexpensively - so among my favorite ingredients are both homemade marinara sauce and eggs. 
This is a takeoff on the classic Italian Eggs in Purgatory - which is a gorgeous little dish of eggs, marinara and potatoes - which I love. But I realized I could toss a couple ingredients in a ramekin and have something fabulous even faster. Even better? My kids love it - especially with a bit of Italian crusty bread or focaccia to dip in it. So this recipe gives one of the best things I've ever made, and that embodies all I love about food and cooking. Quick, delicious, homemade and simple - packed with flavor and really good for you.  How's that for a perfect meal, anytime? Slap this baby with a salad and you're nearly done.
