We grow sweet potatoes for our own use. The tubers grow on a perennial vine that makes an excellent edible ground cover. In fact, the leaves and stems are delicious in many applications including cooked and in smoothies. There are many varieties of sweet potato. The tubers of most varieties are orange, but other colors include yellow and purple.
