The first trick you see (where Sonic is walking up the wall) is pretty simple, tilt the wiimote back and to the left while holding on to the 1 button and he'll stick to the wall (be sure to let go of 1 once he sticks though). You can continue to walk up it until you reach a certain point, walk forward, speed break, jump off, or you can rapidly cancel by holding the 1 button again. The second trick (where Sonic is walking on water) is done by avoiding the plank, approach the trigger from the left and tilt the wiimote left (it doesn't work all the time though, not sure why).
