Ingredients needed

Horse gram (Kollu) – 1 cup
Shallots - 7 to 8
Tomato - 1
Red chili - 4
Turmeric powder – ¼ tsp
Tamarind – 2 inch
Garlic - 2
Salt as required

For the seasoning

Oil – 2 tsp (Gingelly oil I prefer)
Mustard – 1 tsp
Curry leaves - few

Method

• Dry roast kollu in a pan or kadhai till nice aroma comes and turns into light black. Remove from the heat and allow it to cool. Then wash with water and add it to pressure cooker, add tomato, turmeric and let it sit for 3 whistles.
• Add 2 tsp oil in pan or kadhai. Temper mustard seeds and curry leaves. Add shallots and stir until fried, add broken red chilies.
• Once the pressure is down add the fried shallots to the cooker and boil it for 5 mins.
• Finally, Separate the water and add the kollu in mixer, garlic then tamarind and grind as paste.
• Use the separated kollu (horsegram) cooked water to grind it. Don’t use the normal water.
• For seasoning, Heat oil in a pan, add mustard seeds when it splutters, add curry leaves. And serve hot with rice.
