In this video, we're making a bourbon Pecan Pie. One of my personal favorites! We'll begin by melting un-salted butter, in a mixing bowl set over a pot of simmering water. When the butter has just melted, remove the bowl from the heat and whisk in some tapioca starch that has been blended with one cup of brown sugar, a fourth of a cup of corn syrup, some cane syrup, and a little honey; blending each ingredient in thoroughly before adding the next. Finally add three whole eggs, blending them in one at a time. Before we finish putting the filling together, it's time to line our pie shell with parchment paper, fill it with either pie weights or dried beans and place in a pre-heated 350°F oven for twenty to twenty-five minutes. A little par-baking will keep our pie crust from getting to soggy. Now we can place our mixing bowl back on top of the simmering water and whisk in some fresh grated orange zest, some candied orange peel, a little vanilla extract, some bourbon, and a touch of salt. Insert a thermometer and continue to stir the mixture until you reach an internal temperature of a hundred and thirty degrees. At one thirty, remove the bowl from the heat and we're ready to stir in some roasted and chopped pecans, just enough to incorporate. Pull the par-baked pie crust from the oven, cool slightly and fill. And this baby is ready for the oven. Center rack, pre-heated to 325°F. while our pie is doing it's thing, we'll prepare a bourbon whip cream to go on top. Begin with some chilled whip cream and whisk on high until your cream reaches the soft peak stage. At this point, we can whisk in some confectioners sugar and a little bourbon, continuing to whisk until we reach stiff peak stage. We're ready to transfer it to a bowl, cover and refrigerate until ready for use. It's been about an hour since our pie has been in the oven, let's check it out. Give it a little shake, if it wiggles around but is firm like jello in the center it's done. Place it on a cooling rack and allow it to cool completely so it's fully set up. When your ready to serve your pie, you can serve as is, but I prefer to place it in a 250°F oven for ten to fifteen minutes to warm it up. Slice, top with bourbon whip cream and enjoy!
