Check out my Kare kare recipe: Gelatinous ox leg, tail, and tripe boiled in eight hours to perfection, smother it in a beautiful, thick, golden peanut and rice based sauce with freshly steamed vegetables, and finish it off with shrimp paste - and you will get Kare-kare, a dish made out of love and inspiration that will give anyone an explosion of flavors that stands out in festive occasions.

Like most Filipino dishes, the rich and tasty goodness of kare-kare is a product of the fusion of different cultures when the country was colonized hundreds of years ago. Historians say that it came from the Indians' curry and called it Kare-kare. The Indians missed their own curry and improvised with the available resources here and came up with the Kare-kare. There were also traces that Kare-kare came from the Spanish Era when the Moro elites stayed in Manila and brought their noble dish.

In this new Maputing Cooking episode, Tagalog speaking Australian Chris Urbano shows you how to cook kare-kare recipe - the traditional way! Enjoy!
