Layers of old are being buried under new in Chongqing, China. The city has gone from being a fairly large city in Sichuan, to a municipality and one of China's four National Core cities. There's a lot of change happening. Construction can be seen everywhere. We only spent a brief amount of time in Chongqing, but I have a feeling when we go back it will be a little different. Maybe one of the large waterfront projects will be finished. Maybe a new skyscraper will be dominating the skyline. One thing will not change though: the spicy broth that dominates Chongqing's food scene. Hotpot in Chongqing is as much of a challenge as it is a meal. Pieces of meat and vegetables are placed in the broth and cooked, absorbing the deadly chili broth. I'd call it a must-try in Chongqing, but if you don't like spicy food - don't go near it!
