Angela made supplì for my birthday. Supplì is deep-fried croquettes. These are very labor intensive and require as much time as they do effort as they have to rest for at least eight hours. We first encountered these during our visit to Rome, Italy. We found them in pizzerias as people ordered them while they waited.

At the end of the video, Angela gives a quick lesson on how Arborio rice is different from ordinary rice.

Ingredients
3 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Unsalted Butter
1/2 cup Finely Diced Onions
3 cups pureed tomatos
2 cups poultry broth
1 cup Arborio rice
1/2 cup dry white wine
4 Tablespoons of fresh (or) 2 Tablespoons of dry basil
2 Pinches salt
2 Pinches pepper
1/2 - 1 cup parmesan cheese
2 cups mozzarella cheese (cubed)
2 cups flour
2 eggs
milk
breadrumbs

In a pan on medium heat add Extra Virgin Olive Oil & Butter and heat until the butter melts. Once melted add Onions and cook until the onion is translucent. Stir until the butter and onion mixture complete coat the rice. Add wine to the pan and stir until wine is absorbed. Add 1/2 cup of tomato/broth mix and stir until absorbed until all the mix has been incorporated in the pan.

After the tomato/broth mixture has been absorbed, turn off the heat and allow the pan to start cooling. After resting yet still warm add basil, salt, pepper and parmesan cheese. Mix and incorporate the spices and cheese. Place in the refrigerator for 6-8 hours.

Roll the ball in the flour plate making sure to cover well and tap off any excess flour. Next, roll the ball through the milk and eggs plate making sure to coat the surface of the ball. Finally, roll the ball through the breadrumbs plate making sure to cover up any shiny areas. Set aside.
