After my appendix surgery, my sweet girlfriend Kim brought me the most delicious fall dinner -- these Sausage Apple Stuffed Acorn Squash. Not only were they insanely delicious, they are also healthy, and are a great warm meal for the season! I've made them now once since and even my kids love them.
