Greetings! Sharing a wonderful autumn dinner, this cinnamon chicken is inspired by Laura Ingalls Wilder of all people. I remember reading how she met her husband and the silly story of what took place. The first meal she ever prepared for him was cinnamon chicken. he claimed it was his favorite. I doubt that Laura ever made her cinnamon chicken the way I have made mine, but everyone can be inspired and make things their own way.

If you would like to see the process for spatchcocking the chicken you can see that here :

Spatchcocking is the quickest way to roast a bird, in my opinion. It is easy and quick and really helps you to infuse the flavors of your choice into your bird.

I hope you will give cinnamon chicken a try and enjoy the wonderful Autumn that is upon us!

Happy Eating!
