Chicken Parmesan

2lbs of chicken breast thinly sliced
2 eggs
1/3 cup of milk
2 cups of Italian bread crumbs
1 cup olive oil
3 cups of you favorite tomato sauce 
2 cups shredded mozzarella
1/4 parmesan cheese 

1. Begin to heat oil over medium heat in a deep frying pan. Also preheat oven to 350 degrees

2. Mix eggs and milk together in a bowl and whisk for one minute

3. Dip chicken into the egg mixture until wet and then roll in the bread crumbs. Make sure chicken is completely coated. Repeat on all pieces of chicken. 

4. Place chicken in hot oil for 4 minutes on each side or until golden brown

5. When all chicken pieces have been browned place them in a baking pan and cover with sauce.

6. Sprinkle mozzarella and parmesan over chicken

7. Bake chicken for 20 minutes or until cheese is completely melted. 

Serves 6 Enjoy

Cheddar and Bacon potato Salad

2 1/2 pounds of red potatoes cubed in chunks
1 cup shredded cheddar cheese 
1/2 cup bacon crumbles
1/4 green onion
1 cup mayo
1/2 cup ranch
1/2 cup sour cream
salt and pepper to taste

1. Boil potatoes until fork tender in salted water. Drain and let cool.

2. Add all remaining ingredients to fully cooled potatoes. Mix thoroughly.

3. Add salt and pepper taste. Chill and enjoy.

Serves 6

Turkey Noodle Soup

64oz of Chicken Broth
2 cups diced turkey (I generally use a turkey carcass. Makes broth  and all extra meat falls off the bone into the soup)
1/2 cup of diced celery
1/2 cup of diced carrots 
1/2 of diced onions 
1/4 cup of diced parsnip 
1/4 cup of diced turnip
2 cups of cold water
8oz of bow tie pasta 

1. Place broth, turkey and vegetables into a pot and simmer on med low for one hour. 

2. Bring soup to a boil and add pasta.

3. Cook until pasta is tender. Serve immediately with crackers 

Serves 8
