A rare cooking video in which we see if we can make a passable carrot cake using what I already have in my kitchen.

EXACT MEASUREMENTS!
175g sugar
175ml vegetable oil
3 eggs
1 or 2 carrots
175g flour
1tsp baking powder (or bicarb of soda)
2 tsp cinnamon

For the frosting:
175g icing sugar
50g butter
200g cream cheeeeeese
