Mary Constantine makes shrimp and roasted red pepper quesadillas, a quick meal for busy week nights. This video recipe is part of a collection of recipes from the "Stirring the Pot" series with Mary Constantine, based in East Tennessee and a product of the Knoxville News Sentinel. RECIPE: 1 1/2 pounds cooked peeled shrimp 1 (12-ounce) jar roasted red peppers, drained 1/2 cup olive oil 8 (10-inch) flour tortillas 4 cups preshredded Monterey Jack cheese with peppers 1 cup pickled jalapeno peppers, drained Sour cream Use a paring knife to cut the shrimp in half. Cut the red peppers into thin strips. Heat 1 tablespoon of the olive oil in a large nonstick skillet. Place 1 tortilla in the pan. Sprinkle with cheese, shrimp, peppers and jalapenos. Top with another tortilla. Once the cheese is melted, carefully turn the quesadilla with a large spatula. Remove it from the pan after it is browned. Repeat with remaining tortillas. Slice each quesadilla into 6 wedges and serve with sour cream. Yield: 6 servings. "Quick-Fix Southern" (Andrews McMeel Publishing, $16.99)
