Flatbread With Roasted Garlic

WARNING:  Roasted garlic is deceptively mild, yet delicious tasting.  You will not be able to tell how bad you smell, therefore everyone you love must be immunized with roasted garlic.  

My favorite restaurant in the world closed down and this is a re-creation of their signature appetizer.  My sister was the one who discovered you just make it with pizza dough.  We have both experimented with trying to capture the recipe exactly and it's close enough.

*Roasted Garlic*

Head of garlic
Butter
Salt
Pepper
Extra virgin olive oil

Cut off the top of the garlic, exposing the cloves.  Spread butter on the surface. Sprinkle with a little salt and pepper.  Drizzle with a little olive oil and wrap it in foil, placing it in a small dish.

Bake at 300 for 45 minutes.
Open the foil.  Baste with olive oil.  Bake another 8-10 minutes.
Repeat this until the cloves of garlic start to pop up.  
Squeeze out the cloves when cool enough and mash them with a fork to create a nice spread.

*Flatbread*

Pizza dough
Extra virgin olive oil
Parmesan cheese (grated)
Parsley flakes
Dried rosemary
Cambozola cheese (on the side)

Preheat oven to 450 degrees.  Roll out the dough, place on a pizza pan that has been rubbed with olive oil.  Brush the dough with olive oil.  Sprinkle with herbs and cheese.

Bake for 7-9 minutes.  It will be bubbly and will harden a bit after it cools, so don't bake it too long unless you want it to be like a cracker.  

Spread on roasted garlic and cambozola and dip it in olive oil or balsamic vinegar if desired. 

You can also put roasted garlic on pizza, in mashed potatoes, etc.!  I love mashed potates with roasted garlic and gorgonzola cheese.  Try it!
