I'm pretty sure I cheesed this puzzle. I don't think you were meant to damage boost past the plant, get the red coin, and be able to come back without hitting the POW. However, the intended solution is not far off from this. The hardest part was figuring out how to get the spring. You can clip a P-Switch through a sideways spring to push the spring down. Incidentally this also works with a POW, but you'll lose if you use the POW instead as you need to kill the muncher.
