Skinless, boneless chicken thighs stuffed with mushroom duxelles. 

Ingredients:
4 skinless boneless chicken thighs (or skin on if preferred) 
8 oz mushrooms (Any variety or combination) diced
2  or 3 shallots diced
4 to 6 tbsp butter (plus a bit more)
salt & pepper 
1/4 cup bread crumbs
1/2 cup heavy cream
