1/2 cup butter flavor shortening
1 cup white sugar
1/2 cup packed light brown sugar
2 large eggs, room temperature
1 tsp vanilla extract
1/2 tsp almond extract
3 cups self rising flour + 1/2 tsp baking soda, sifted

1 (9x13) inch long cookie sheet with foil or parchment paper
Christmas Cookie Cutters, of your choice
Red, Green, and White Sprinkles/Jimmies

Cream Cheese Frosting

1 (8 oz) package cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
1 tsp vanilla extract
1 (16 oz) box powdered sugar, sifted
Red and Green Food Coloring

In a large bowl with hand mixer or stand mixer with paddle attachment, add butter, butter shortening, white and brown sugar; cream until fluffy. Next add eggs one at a time, then add vanilla and almond extract. Slowly add flour mixture into the butter mixture and mix until well incorporated. Place cookie dough into plastic wrap and chill in the refrigerator until firm (about 2 hours).

Preheat Oven to 400 Degrees

After 2 hours, Place dough onto a clean, floured surface and knead a few times. Using a floured rolling pin, roll cookie dough about 1/4 inch thick. Cut out the dough using the cookie cutters and place them onto the cookie sheet. Bake for 6-8 minutes until the edges are brown. Remove from oven and cool completely. Frost the cookies all over and add sprinkles. Place on a platter or cake stand and serve.

Cream Cheese Frosting

In a large bowl with hand mixer or stand mixer with paddle attachment, add cream cheese and butter; cream until fluffy. Blend in vanilla extract. Next slowly add powdered sugar and blend until well combined. Separate 1/2 the frosting into 2 bowls, add green food coloring in one and red food coloring in another and stir until combined.
