This recipe is perfect anytime of the year but for sure during the holidays like Thanksgiving and Christmas.

The addition of the leeks and roasted garlic really make for a delicious rustic flavor and it's very healthy too.  Butternut squash is high in vitamin A and C as well as fiber.  This recipe is gluten free (be sure and read those labels).
