INGREDIENTS:


For the Fried Chicken: 
8 chicken breasts, boneless and skinless
Salt and pepper
4 tsp garlic powder
4 tsp chili powder
2 cup flour
2 cup cornstarch
8 eggs, beaten
Oil for frying

For the Calamansi Ginger flavor:
1/8 cup calamansi juice
¼ cup honey
2 tbsp soy sauce
1 tbsp grated ginger

For the Salted Egg flavor:
3 tbsp butter
4 cloves garlic, minced
1 bird’s eye chili, seeded and chopped
6 salted egg yolks, mashed
1 tsp curry powder
½ tsp sugar

For the Honey Adobo flavor:
6 cloves garlic, minced
¼ cup soy sauce
¼ cup honey
½ tbsp. vinegar
½ tsp. cornstarch
2 bay leaves

For the Sweet Chili flavor:
¼ cup honey
1 tbsp. vinegar
2 tsp. sugar
4 bird’s eye chili, seeded and chopped
4 cloves garlic, minced
Cornstarch to thicken (optional)


PROCEDURE:

For the Fried Chicken:
1. Slice chicken into bite-sized chunks. 
2. Combine salt, pepper, garlic powder, chili powder, flour and cornstarch and evenly coat season chicken. 
3. Beat eggs and coat chicken then coat again in the flour and cornstarch mixture.
5. Fry until golden brown. Divide the cooked chicken into four servings.

For the Calamansi Ginger flavor:

1. Mix calamansi juice with honey and soy sauce and add grated ginger in a saucepan over medium heat.
2. Allow to thicken.
3. Coat chicken.

For the Salted Egg flavor:
1. Separate salted egg yolks.
1. Heat butter in a pan over medium heat.
2. Saute garlic and chilies.
3. Add salted egg yolks, 1 tsp curry powder, sugar and combine.
4. Coat chicken.

For the Honey Adobo flavor:
1. Combine garlic, soy sauce, honey, vinegar and bay leaves in a saucepan over medium heat. 
2. In a small bowl, place cornstarch and a tablespoon of the sauce mixture and mix to dissolve. Add to the saucepan and stir until slightly thickened. 
3. Coat chicken. 

For the Sweet Chili flavor:
1. Combine honey, vinegar, sugar, garlic and chili in a saucepan over medium heat. 
2. Allow to thicken. 
3. Coat chicken.
