Robert Jones shows you how to make Strawberry Ice Cream
Let me show you how to make delicious Ice Cream for your kids or with friends.  Fun participation and dessert of dreams.

Strawberry Ice Cream -- 2014-05-25

3 cups (700ml) Strawberries, Ripe,  Fresh, Hulled and Sliced
4 Tablespoons (60ml) Lemon Juice, Fresh
1 1/2 Cups (300g) Sugar, White, Divided
1 1/2 Cups (350ml) Milk, 2%
2 3/4 Cups (650ml) Heavy Cream
1 1/2 Teaspoons (25ml) Vanilla Extract
1 Coffee Can, Small
1 Coffee Can, Large
1 Zip Top Bag
1-2 Cups Rock Salt

Mix strawberries with the lemon juice and 1/2 cup of sugar. Set aside and allow berries to macerate for 2 hours. Remove half the berries and set aside, puree the rest with the juice.

In a mixing bowl or blender, mix together all remaining ingredients except the sliced strawberries.  Stir until sugar is dissolved. Add the remaining berries and stir only to combine.  Do not puree if you want strawberry pieces in the finished ice cream. 

Pour mixture into small coffee can, filling about 2/3 full.  Place lid on can tightly then place inside zip top bag, sealing with as little air inside as possible.  Place small can inside large can and fill remaining space with ice and a couple handfuls of rock salt.  Seal large can with top and wrap up in a towel.  Shake.  Shake. Shake.  Get a friend to shake.  Have your kids shake.  Shake.  After about 20 minutes, carefully open the large can and add more salt and ice.  Shake.  

After about 40-45 minutes the ice cream should be pretty frozen.  Remove the small can and check for how frozen.  If fluffed up and stiff, either place in the freezer to harden or transfer to a freezer safe container and then place into freezer.  Best if frozen for a few hours till very stiff.  

Note:  This makes 2 batches of ice cream.  Or, if you have an ice cream machine, you can do it that way as well.
