How to make wine? How about a nice mix of Merlot and Cabernet Sauvignon? 

We’re still in France and learning how to make wine! Ever wondered how a bottle ends up with 30% Cabernet Sauvignon, while another bottle will only have 10% of that same grape variety? That’s the magic of “assemblage”, the step of blending various wines before bottling.
