A dumpling is an amazing thing, and when you cover it in a spicy chili oil with dark soy sauce it becomes an even more amazing thing. Zhong dumplings are a Sichuan specialty that should not be missed. These pork stuffed red oil dumplings are spicy, sweet, and garlicky. They're addictive, and if they weren't so slippery I'd probably scarf them down in minutes.

The Chinese name for this dish is Zhōng shuǐjiǎo (钟水饺). Zhong being the name of the man who invented them. Shui jiao meaning boiled dumplings. I've also heard them called Hóng yóu jiǎozi (紅油饺子) or red oil dumplings.

WHERE TO TRY ZHONG DUMPLINGS IN CHENGDU
I ate this delicious bowl in the food court of a mall. Chinese food courts are full of great food. First, head to the cashier counter to put money on a card. Then pick a vendor and pay using the card. When you're done, you can return the card and get the leftover money back. This particular food court is at the Saiho Shopping Mall, below the Ito Yokada. The vendor is called Old Zhong Snacks of Chengdu. They make a mean dumpling, and the cost is only 14 RMB.

In this series, I am eating my way through a deck of cards. I bought a deck of food themed playing cards that feature a different Sichuan dish on every card. Every week I'll shuffle the deck and pick one random card to hunt down and sample.
