CLICK FOR RECIPE Always test the spiciness of your chilli, before you add it to the pan, so you don’t over do it Cod and Chorizo Sagnaki with Feta Serves 2 4 tbsp. extra-virgin olive oil 4 cloves garlic, minced 4 spring onions, minced 1 tbsp. tomato paste 1⁄2 cup white wine 1 tsp. dried oregano 1/2-1 red chilli 400g chopped tomatoes 75g chorizo 2 skinless fillets cod, cut in cubes sea salt and freshly ground black pepper, to taste 2 tbs fresh parsley, finely sliced 150g feta cheese 1 lemon Arrange a rack in the middle of the oven and heat the grill/ broiler Heat a frying pan over medium heat. If using fresh chorizo, squeeze out of the casing and add to the pan with the olive oil, garlic and chopped chilli. If you are using dried charcuterie chorizo, roughly chop it and add to the pan with the oil, garlic and chilli. Cook for 5 mins, then add spring onions and cook for further 5 mins. Stir in tomato paste; cook for a couple of minutes and then add wine to deglaze the pan. Simmer the wine until reduced by half, 3 to 4 minutes. Add oregano, and chopped tomatoes and bring the mixture to a simmer. Reduce heat to medium-low and cook, stirring often, until slightly thickened, 12 minutes. Stir in mint and cod, season with salt and pepper; crumble feta over top. Broil until bubbly, 3 to 5 minutes.
