'In Season - Sustainable Kitchen' by Radek Rozkiewicz.

Food presents a complex set of problems within the sustainability agenda and is a necessity that constitutes a significant portion of global carbon emissions. In many Melbourne homes, kitchens are designed to adhere to behaviours of mass-scaled production and consumption of food, encouraged by agri-business and supermarkets. This results in food habits that are disconnected from local seasonal production, are reliant upon excessive transportation and storage, and value convenience over developing the capabilities of home-made produce.

This project proposes a kitchen designed for people already interested in sustainable food practices, but unable to fully extend these practices due to conventional domestic kitchen design. IN Season is a response to investigating local Melbourne kitchen systems in homes. This involved the eating practices, food knowledge, bulk-food stores, composting habits and available designed artefacts of domestic kitchens. The infrastructures of this off-the-grid kitchen enables users to develop the knowledge and capacity to participate in sustainable food systems, such as consuming local and home-made produce.
