Easy to make soup recipes can be a delight to serve at your dinner party. In this video, Derek Clayton, Chef de cuisine at Lola Bistro in Cleveland shows us how to make a roasted butternut squash soup. He begins making this delicious butternut squash soup recipe by pre-heating the oven to 400 degrees and slicing the squash half lengthwise. He scoops out the seeds and separates them from the pulp. After the seeds are put in a bowl, he keeps them aside. He then makes several cuts on the flesh of the squash and rubs olive oil and salt over it. The squash is then roasted in the oven for about an hour till they caramelize and become tender. He then bakes the seeds in an oven for about five minutes. In a small bowl, he whisks together melted butter, cayenne pepper, salt and cinnamon, followed by toasted seeds. In a stockpot, he adds chopped carrots, onions, celery and jalapenos to the oil. After stirring them for ten minutes, he adds maple syrup and cooks them until the syrup reduces to about two-thirds. Once the squash is done, Derek removes it from the oven and adds the flesh of the squash to the stockpot containing the vegetables. He places the stockpot on medium heat on the stovetop and adds chicken stock and cream to the mixture and allows it to simmer for about ten minutes. He then puts this mixture into the blender and adds cider vinegar and salt. He transfers the soup into small serving bowls and tops them with cilantro, toasted seeds and chopped apple.
