This potato salad formula is somewhat unconventional but very good looking and delicious.  This formula includes the potatoes being diced and not cooked to the extent that normal potato salads are cooked.  The results are a loosely mixed combination of foods and not a mashed together style potato salad, which is what we’re used to seeing and eating.  Don’t get me wrong, I love the mashed up styles as well but this approach allows you to differentiate the ingredients while eating it.  The combination of bacon lardoons,  minced celery, red pepper, scallions whole grain mustard seeds with garlic, lemon and oil set this one apart from the rest.  This potato salad can be warmed up and served as a potato accompaniment for upscale main dishes as well as being a simple potato salad served with sandwiches etc.   I recommend it be served at room temperature if it’s served the same day it’s made.  If refrigerated overnight then I recommend it be warmed up and served hot or warm.
