Gazpachi is a cold soup and can be made from a number of items. My mother makes a veggie gazpacho with peppers, tomatoes, cucumbers, garlic, etc...
I decided I would make mine with melon. It's very refreshing and has a kick to it. You can cut this recipe in half or even reduce some of the items like use one onion instead of two, in order to mellow the sharp taste to it. I suggest trying one onion to start and less black and cayenne pepper and tasting before adding more. Here's my recipe:
1 Canary Melon
1 Watermelon
3 Cucumbers
2-3 Sweet Red Peppers
2 Onions
2 Cups Cilantro
10 Limes
1 tsp cayenne pepper
1-2 tsp black pepper
4 tsp sea salt
Juice the limes and set aside or add to your bowl of melon chunks as you go. But keep them handy to blend into your mix.
Cut onion, peppers, cucumber, and melon into chunks. Set aside. Add lime juice.
Blend several scoops of your fruits & veggies along with all of the cilantro and lime juice.
Pour into large bowl.
Add several unblended scoops of your veggies and fruits to keep it chunky.
Keep doing this until you get the consistency you want for your cold summer soup. Add salt, pepper and cayenne pepper to taste.
