This is a simple but delicious recipe I make using Eggplant and a Pasta Sauce. I never measure but I will do my best to give ingredients and general directions.

Cut eggplant in slices and bake, (lightly browning in olive oil) on 400 degrees. Salt and pepper before baking.
While eggplant is browning make your favorite pasta sauce or brown hamburger meat and add garlic, onion salt, oregano, italian seasonings, sugar and any seasonings you would like. Also add a can or two of canned pasta sauce. It all depends on how big a pot of sauce you are making.
Once this is done spray your pan, layer with meat sauce, then eggplant, then cheeses and continue to layer until all ingredients are used.
Cover and bake until bubbly. About 45 minutes at 350 degrees.
