Cheekyricho Cherry Friands. Moist Dense fruity little cakes that are perfect for High Tea, Supper or a mid afternoon snack. They travel well, are easy to make and taste fantastic. We made these with some organic cherries we bought at an orchard and they were amazing.  This recipe makes 6 Friands, The recipe can be easily doubled but I only had 6 Friand tins. We do hope you give it a try.
INGREDIENTS:
3 egg whites
25g(1oz) vanilla extract
80g(¾C) icing sugar(confectioners sugar)
50g(½C)Almond Meal
25g(¼C)flour
80g(3oz) pitted fresh organic cherries
100g(1 stick) melted butter.
METHOD:
Whisk egg whites with a fork until foamy. Stir in sifted flour,sugar and almond meal.Add melted butter and vanilla. stir until combined. Pour into greased Friand Tins. Pop 5 cherries into centre of Friand tin and sink with your finger until just below the surface. Dont place them too near the sides as they will stick. Bake on a baking tray lined with baking paper 180℃(350℉) for 20 minutes. Remove from oven and cool slightly before removing from pans.Serve dusted with icing sugar if desired.
