This little bakery stand is setup everyday in my local market. It makes an assortment of muffins, cookies, stuffed breads, and fried twists called Mahua (麻花).

Mahua are sweet bread sticks, similar to a Filipino pilipit. The most exciting part of their production is the machine that makes them. The dough is fed into it, it's pushed out in strands which are twisted, a blade comes down and chops the dough strand into pieces. The bits of dough are fried in peanut oil until they're nice a crispy.

The stand also makes sweet muffins with various natural flavors including corn, sesame, pumpkin, and more.

I bought a big bag of mini muffins for 5 RMB (about 75 cents). That's so cheap! The mahua twists are also very cheap, but I actually prefer the savory version of them, which is harder to find in China.

I find operations like this one fascinating. The fluidity that the workers have - and under conditions that don't allow for mistakes - the food machine itself might not be a well-oiled machine, but the entire street bakery operation certainly is.

You can find stands like this in most Chinese markets. Look for a table setup with various baked goods, and chances are they are making the items fresh somewhere close.
