Hi Guys, today I’ll show you how to make a spicy roast chicken easily. There’s no chopping or sauteeing or any real prep work. It’s so simple that you can even make this on a week night.  First thing you do is turn your oven on to 475 degrees fahrenheit.

This is our spice mix with 1 tsp salt, 1 tsp garlic powder, 1 tsp ground coriander, 1 tsp garam masala, ½ tsp fennel powder, ½ tsp ground turmeric and ½ tsp cayenne pepper. The ½ tsp of cayenne is the right amount of spice for me and it’s also good for kids so they don’t burn their little mouths. If your family is used to eating spicy food on a regular basis, increase the cayenne pepper to 1 or even 2 tsps. 

If you don’t have a rack, place the chicken straight on the foil, it will still come out crispy. 
Put the chicken in a preheated 475 degree oven for about 1 hour or until the chicken reaches 165 degrees fahrenheit. Check the chicken after the first 20 minutes and baste it with a little ghee. 

The skin on this chicken is crispy and tasty from all the spices and ghee. The meat is juicy and flavorful. This is one of my favorite recipes because it’s fast and you still feel like you’re eating a real meal cooked from scratch. While the chicken’s in the oven, you can make baked potatoes or mashed potatoes and a simple vegetable. You can put whole washed potatoes directly on a rack in the oven while the chicken is roasting so the potatoes and chicken will be done at the same time. A russett potato is best for baking,  prick the potatoes twice on top and twice on the bottom with a fork and put it directly on the oven rack, no foil needed. They’ll end up having a crispy skin which really adds to the flavor of the potato.
