Today in this video I've made Methi Launji.It is a Jain cuisine ,cooked in the days of fast.Actually it is a sort of a pickle which you like to eat with puris,paranthas or kachauris,etc.It is slightly bitter,sweet and spicy.You are sure to enjoy the delicate balance of flavors in this traditional preparation of soaked methi seeds with sweet ingredients like jaggery and resins.While I've used soaked fenugreek seeds in this recipe,you can even opt to use sprouted ones,which makes the launji less nitter.This launji stays fresh upto 2 weeks in the refrigerator.
