Eggplant is one of my favorite vegetables, and this is my favorite way to make it. This is a little different than most eggplant parmesan recipes. In this recipe, I use my homemade, home canned tomato sauce from my backyard tomatoes, but you can use your favorite marinara sauce if you prefer. Try it! You won't be disappointed.
