Sharing the soup and salad I'll be eating this week! Here are the recipes: Greek Pasta Salad 12oz Black bean pasta (or pasta of choice) cooked according to package directions and cooled 1 cucumber, chopped 1 orange bell pepper, chopped, 1/2 of a red onion, sliced 1 pint of grape tomatoes, sliced in half 1/2 cup of kalamata olives, sliced in half 1 T. olive oil 1/4 cup red wine vinegar 1 clove of garlic, minced 1 T. fresh oregano, chopped or 1 t. dried oregano salt to taste feta cheese (optional) Mix all ingredients together, chill and enjoy! Makes 6 servings (THM E) -=+=- Kale, Sweet Potato & Pork Curry 1 t. cooking oil 1 1/2lb diced pork stew meat seasoned with salt and pepper 1 onion, chopped 1 T. fresh ginger 3 garlic cloves, minced 1 T. curry paste (I used Thai and True Panang Curry Paste) 1 bag of frozen kale 2 10oz bags of frozen sweet potato 7-8 cups of broth or broth/water mixture 2/3 cup full fat coconut milk Saute pork in the oil until browned. Add onion and saute for a minute or two. Add ginger, garlic and curry paste and saute for another minute or two. Add remaining ingredients, stir and lock lid. Cook on Manual mode for 5 minutes. Allow to NPR for at least 10 minutes. Release residual pressure and add more salt to taste. Makes 6-8 servings (THM E, Paleo, Whole30) I used my 6qt Instant Pot (IP-DUO60 7-in-1) in this video.
