Ah yes, it is that time of year again...the zucchinis and summer squash are growing like weeds and you are cooking them in every which way you can (as well as giving them away!). Here's a super simple recipe that is great for summer (great for a picnic!) - it's a nice change from sauteed zucchini or turning zucchini into bread (although I do love a good gluten free chocolate zucchini bread, mmmm).
