Brine:
1 cup salt
1 cup white sugar
1 orange and zest
1 lemon and zest
1 lime and zest
1 tablespoon ground black pepper
5 cups water

Chicken:
5.5lb chicken (the size I used)
I did not measure the seasonings! I think you should just be very generous. But here are the seasonings I used:
Season all
Olive Garden Garlic and Herb Seasoning
Salt
Ground black pepper
Parsley for garnish
