I was traveling from Taipei to Juifen. To get there, I took the train ti Ruifang, where i would need a bus to get up the mountain to Juifen.  When I arrived to Ruifang train station, I began to walk out to the street.  A block and a half away,  I spotted this lady preparing homemade ice cream scoops, inside a pancake, with shaved peanuts. I had to stop and order one.

Turns out that is called:
三色 Three Color Ice Cream -- red beans, mango, taro

I ordered mine made into a peanut roll ice cream 花生冰淇淋捲.

She hand shaved the peanuts and sprinkled it over my 2 scoops of homemade ice cream , and then rolled it all together like a Mexican burrito.  

The taste was so delicious!  I loved how it wasn't overly sweet.  The cost? Only 30 TWD.  That is only $1 USD.
