It's finally garlic-scape season, and so, since many viewers requested this, I've made a fairly lengthy video on how to preserve them using lacto-fermentation, a very ancient way of making pickles, where micro-organisms in a brine solution gradually raise the acidity of the solution by converting simple carbohydrates into lactic acid, which preserves vegetables, has probiotic benefits, and tastes great.
