Beef And Pork Meatballs With Pasta Sauce

Hi friends,
I thought I would share an easy to make and yummy meatball and pasta sauce recipe. In the video, silly me used too much butter so do remember to half the amount if you want to. Have fun and don't be afraid to experiment with recipes.  Add more herbs and spices, or try different wines...  :)

BEEF & PORK MEATBALLS  Serves 4-6

500g minced pork
500g minced beef
2 eggs
1/4 cup chopped continental parsley
salt/pepper
1 teaspoon ground paprika
1 beef stock cube dissolved in a couple of tblspns boiled water
1 tblspn butter
1 cup of bread crumbs
1 brown onion diced

Pre-heat oven at 220 degrees celsius or 428 degrees farenheit.
Line a baking tray with baking paper.  Give it a light spray with vegetable oil.
Heat up a fry pan on the stove top, add butter, when melted add the diced onion.  Cook until lightly golden, stirring now and then.  Set aside to cool.
Meanwhile in a large mixing bowl add the beef and pork mince, eggs, parsley, pinch of salt and pepper, paprika, dissolved stock and bread crumbs.  Work through thoroughly.  Add cooled down onion and mix together.  
Roll spoonfulls of the meat mixture into balls with your hands.  Place on prepared tray and cook for 12 minutes at 220 degrees celsius (428 degrees farenheit).  Take tray out of the oven, turn the meatballs over and cook for a further 10 to 15 minutes.  I put my oven temperature up a little for the last ten minutes of cooking.  Once cooked, take out the oven, set aside and start the tomato based sauce.

SAUCE FOR MEATBALLS

1 tablespoon olive oil 1 tablespoon butter (half if you wish)
1 brown onion finely diced
2 cloves garlic chopped
340g tomato paste
800g diced Italian tomatoes
3/4 cup red wine
salt/pepper to taste
1/4 cup finely chopped parsley
1/2 cup roughly chopped basil

Heat up olive oil in large saucepan.  Add onion and brown well.  Add garlic and cook for another minute.  Stir in tomato paste, cook for another minute then add the diced tomatoes and wine.  Combine well.  Add pepper to your taste, parsley and basil.  Stir and simmer for a good ten to fifteen minutes.  (I added a further 1/4 cup of wine....as the mixture was a little thick...you can add water as another option).  Taste to see if you need to add any salt.
At this stage you can add the meatballs to the sauce.  Cook up your pasta while the meatballs are warming up.

Serve up and enjoy :)
