Tudor Pancakes

Ingredients ------------------ 3 eggs 6oz/170g plain flour 1/2 pint/250ml milk 1/4 pint/125ml ale (whatever you fancy or you could use water) 1/2 teaspoon cinnamon a grating of nutmeg 1/4 teaspoon ginger A knob of butter Method ------------ Put the flour into a mixing bowl. Add the three eggs Whisk gently to mix the flour and eggs, slowly adding the milk as you go, to loosen the mixture. Try to remove lumps before adding too much liquid. Add the spices and mix together. Add in the beer and give it a final whisk In a frying pan, melt the butter. Once melted, add the butter into the batter mix and whisk it in. Now, put one spoonful of the batter mixture into the hot frying pan (quantity to match the size of your pan) and fry the pancake for around 1 minute. Turn (or flip!) the pancake and give it a few moments on the second side. Now, put the pancake aside and cook the rest, one spoonful at a time! ENJOY YOUR TUDOR PANCAKES!
